A Love Affair

Cooking has always been my version of therapy, a way of coping when something in my life goes wrong. At the moment this seems to be quite often. So I have decided to gain control through baking. The only issue with this otherwise fantastic plan is that I am a coeliac (unable to eat wheat, rye and barley). No wheat means very limited baking options. On reflection, this does give me the opportunity to test out new recipes and adapt old ones, like these wonderful cupcakes…
